Popping in to share sweet quality moments I’ve been having with my pre-teen!

My oldest son, Baylen, has quite the sweet tooth, and I’ve been cutting back on buying junk food from the grocery store, which means when he wants something sweet it usually comes in the form of a recipe I make. Even though making desserts at home isn’t technically healthy, I feel better about make them myself than buying packaged treats with all kinds of preservatives and mystery ingredients.

Chocolate chip Cookes are Baylen’s favorite (mine too) so we’ve had fun making them lately and tweaking ingredients. Our recipe is finally perfected and he asks for these literally EVERY night. Haha! I don’t make them quite as much as he would like, but they are made a couple times a week lately. As my kids get older, I’m so thankful for these sweet quality time opportunities with them. Oftentimes after dinner he’ll help me clean up the kitchen, and then we make the cookies together. By now he knows all the ingredients to get out, and we can whip these together in about 5 minutes!

Here’s our simple recipe! We adapted it slightly from this recipe we found! We hope you love them too!

Sidenote! If you are using regular flour to bake, I highly recommend switching to something that is healthier. So many Americans have gluten sensitivities due to the way that flour is processed here in the states. I discovered the difference when we traveled to Europe for the first time a couple years ago. I could eat pasta and pastries, felt great, and didn’t gain a pound! In Europe, the majority of wheat grown is soft wheat, lower in proteins and thus lower in gluten content. American wheat is covered in glyphosate. Glyphosate is a herbicide (main ingredient in Roundup) used on American wheat to kill bacteria, dry out and prepare the wheat crop for harvest. There are a few healthier brands out there. They cost a bit more, but so worth it. I like the Organic Einkhorn All Purpose Flour and have found the price to be the best on Thrive Market. BEST EVER Chocolate Chip Cookies:

DIRECTIONS:

  1. Preheat oven to 375 degrees.
  2. Line a baking sheet with parchment paper.
  3. Mix all ingredients together in the order listed, except the flour and chocolate chips.
  4. Add the flour, one cup at a time and mix until dough like consistency, then mix in chocolate chips.
  5. Bake for 9 – 11 minutes. Do NOT overbake. I like to take them out before they are brown on top, and only a tiny bit brown on the bottom!
  6. Let them cool for a few minutes and enjoy!

INGREDIENTS:

  • 1 cup salted butter softened
  • 1 cup granulated sugar
  • 1 cup light brown packed
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 1 tsp salt
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 3 cups all purpose flour
  • 2 cups chocolate chips
