IMG_9480Don’t you love those friends who “just get it?” They are intentional and mindful of what you’re going through, knowing exactly what you need during different seasons of life. Today I’d like to talk about a dear friend I have who has just been an absolute peach, bringing us meals every week and listening as I process the emotional and physical changes my body has been going through since having my precious twin girls. She has a huge heart, and is surely one of the most selfless people I know. She’s not someone who is out to get recognized for her kindness, and lives a life that’s humble and honest.

She also happens to be an incredible cook and baker, and brought over this delicious dessert last week that I just have to share with you guys. It was love at first bite. While I wouldn’t necessarily normally choose butterscotch as my favorite dessert flavor, this hit the spot and is a perfect way to change up the chocolate or vanilla varieties I normally tend to go with. The pan I made was gobbled up in no time!IMG_9482If you’re assigned to bring dessert to your next get together, or just want something light and cool to enjoy during this beautiful spring weather, I really think you should give this one a whirl. A huge bonus is that it’s stress free, coming together with only a few affordable ingredients. IMG_9427IMG_9440IMG_9428

Butterscotch Pudding Cake (Original recipe from Shugary Sweets)

Ingredients:

-1 box yellow cake mix

-1 box instant butterscotch pudding mix (I used fat free sugar free.)

-2 cups milk

-11 oz. bag butterscotch chips

-12 oz. Cool Whip (I used lite.)

Directions: In a large bowl make pudding according to directions. Add in dry cake mix (mix only, do not make the cake according to directions) and butterscotch chips and stir until mixed. Pour into greased 9×13 cake pan and bake according to the directions on the back of the cake mix for a 9×13 pan. Remove from oven and refrigerate for at least two hours or until serving. Frost with Cool Whip and serve chilled.

    Need to avoid your site on foodie days! Went right home and made this for our homeroom kiddos tomorrow at school. At least it will be shared…otherwise I’d really need to kick up my workouts as well 🙂 Thanks for sharing yet another yummy dish!
