Happy Friday!

I’ve been eating these muffins on repeat this week for breakfast, and they are SO good! They are perfect for those of us who want to eat a healthy breakfast in the morning but need something quick to grab and go!

I make a batch or two of these before the week starts, and then I just keep them in a ziplock bag in the fridge, pull them out, and warm up three at a time each morning in the microwave! I add a dash of salt on top and sit down and enjoy them with a cup of coffee!

These fit perfectly into the Ultimate Portion Fix eating plan I use to stay on track with my nutrition! For those of you who follow it, three muffins is 1 green container, 1 red container, 1 yellow container, and 1 tsp!

Spinach Bacon Quinoa Muffins

Makes 12 muffins

Ingredients: 

-4 eggs

-4 cups spinach

-4 tbsp green onions, chopped

-8 slices turkey bacon, cooked and crumbled

-2 cups quinoa, cooked

-4 tsp olive oil

Directions: 

Heat oven to 375 degrees. Grease a regular muffin pan with nonstick spray. In a large bowl, whisk eggs. Add remaining ingredients and mix well until combined. Divide mixture evening amongst 12 muffin cups. Bake for 20 minutes and allow to cool for 5 minutes before removing from the pan!
