Happy Friday EVE!

The weekend is around the corner and I wanted to share a simple salad idea for you to pair with pizza night! Every weekend we have one night when we’ll order pizza delivery or make it at home. Here’s our favorite homemade Detroit style pizza recipe – my brother Jason and sister in law Ali introduced it to us when they came down to visit from Kansas City and we were obsessed. They even bought us this Detroit style pan and we use it ALL time time.

Anyway, whether we order pizza in or make it ourselves, I love pairing it with a salad – it feels good to get some nutrients in and enjoy the pizza without feeling overly bloated the next day.

Ever since we went to Greece a couple years ago (I will do a recap post at some point), we love making authentic Greek salads at home. Unlike how most Greek salads are made in the United States, when you visit Greece, very few of them actually have leafy greens. There are variations depending on what restaurant you visit over there, but this is our favorite way!

Traditional Greek Salad (Makes 3 – 4 servings)

Ingredients:

  • 2 cups chopped cucumbers
  • 1 cup cherry tomatoes halved
  • 1 cup sliced green peppers
  • 1/2 cup kalamata olives (halved or whole)
  • 1/2 cup sliced red onions
  • 1 large chunk feta cheese, sliced
  • 1 – 2 tbsp olive oil
  • salt, pepper, oregano to taste

Mix it up and enjoy!

And just like that, you get a little taste of Greece at home! Ahhh takes me back to our airbnb in Santorini!

Happy Weekend, friends!

xo,
