IMG_9642It’s no secret that I love my crock pot. I unashamedly use it year round, and owe a sincere thank you to the person who invented it. Since Emersyn and Mckinley were born, my appreciation and dependence upon this amazing small appliance has probably quadrupled and it now ranks right up there with the pacifier as my most commonly used item during the baby stage.

Since I’m guessing many of you are more on top of things than me and probably tend to use your slow cooker most often during the cooler months, I thought I’d share a recipe that may be of interest to you as the leaves begin to fall.

A few months ago we had the blessing of having my sister-in-law, Ali, spend a week with us while she was between jobs. She was an absolute servant, helping with everything, and basically gave me a weeklong vacation. This included being a dear and preparing meals for us! One being these delicious chicken tacos. You must try these, friends. I have made them countless times since she visited in July and every time Jake, Baylen, and I gobble them up in no time. I love how chicken turns out in the crockpot, falling apart and perfect for shredding into tacos (and for toddlers who struggle with chewing meat).

Oh, and do yourself a favor and get some crock-pot liners, especially if you hate having to do the usual “soak in the sink for hours on end afterward” as much as I do.

Slow Cooker Chicken Tacos

Ingredients:

  • 4 – 5 frozen boneless skinless chicken breasts
  • 1 jar of salsa (enough to cover the meat)
  • 1 packet of taco seasoning

Directions: Insert crock pot liner, then add chicken, salsa, and taco seasoning. Stir it up and let it cook on low for 5 – 6 hours. Serve on tortilla shells with desired toppings.
