If you’re a mom then you know how easy it can be to forget to feed yourself throughout the day! Breakfast lately seems to be especially easy for me to skimp on. My days of waking up before the kids are non existent as of late since I try to sneak in every extra bit of sleep I can. I imagine that will be the case until the girls are sleeping for longer stretches. Jake usually feeds Baylen breakfast, while I feed the girls upstairs. By the time I’m finished and finally get down to the kitchen, I am absolutely starving and grab whatever is easiest.

In an effort to make sure I’m eating something substantial in the mornings, I’ve been relying on delicious overnight oats. If you’re unfamiliar with overnight oats, it’s just oatmeal that you pair with yogurt, milk, and whatever other toppings that meet your fancy. You simply mix the ingredients together in a bowl, and let them sit overnight in the fridge. In the morning, you pull out the bowl and eat it cold. I especially love it during the warmer months when hot oatmeal doesn’t sound as appealing.

As with regular oatmeal, the flavor combinations you can create are endless. I have three go-to favorites that I think are pretty stellar, so if you’re looking for an easy breakfast while you juggle everything else that needs to get done in the mornings, I’d highly recommend giving them a try. You won’t be disappointed and they’ll help to minimize stress and get your day off to a healthy start. (As an added bonus, if you happen to be breastfeeding, oatmeal helps to promote healthy lactation!)

For my oats of choice I use a combination of old fashioned oats and steel cut oats to give it a bit of a mixed texture. For the yogurt, I use greek style which is packed with protein, but if you prefer regular yogurt, that works well too. Additionally, any type of milk is a go.

Peanut Butter & Dark Chocolate Overnight OatsIMG_9328

Ingredients:

-1/3 cup old fashioned oats

-1/8 cup steel cut oats

-1 (6oz) container Chobani Vanilla greek yogurt

-1/3 cup milk

-2 tablespoons peanut butter

-2 tablespoons dark chocolate chips

Directions: Mix ingredients in bowl, cover, and let sit in the fridge overnight.

Blood Orange Strawberry Banana Overnight OatsIMG_9315

Ingredients:

-1/3 cup old fashioned oats

-1/8 cup steel cut oats

-1 (6oz) container Chobani Blood Orange greek yogurt

-1/3 cup milk

-1/2 banana, sliced

-1/2 cup strawberries, sliced

Directions: Mix ingredients in bowl, cover, and let sit in the fridge overnight.

Brown Sugar Cinnamon Overnight OatsIMG_9316

Ingredients:

-1/3 cup old fashioned oats

-1/8 cup steel cut oats

-1 (6oz) container Chobani Vanilla greek yogurt

-1/3 cup milk

-2 tablespoons brown sugar

-a few dashes of cinnamon

Directions: Mix ingredients in bowl, cover, and let sit in the fridge overnight.

It’s as easy as that! Feel free to add more or less of the ingredients depending on what type of taste you’re going for.

    I love Overnight oats! I make mine similar with oats, plain greek yogurt, coconut milk, a little stevia and then whatever fruit I have on hand. I usually top them with some kind of nut butter. Yum! I haven’t tried adding steel cut oats though. Great idea!

    This is a great idea, Amber! Kurt and I have been making our steel cut oats in our smallest crock pot, and that’s another way to have them ready in the morning if you like them warm. They cook for 8 hours, and are so convenient!
