IMG_9549For the last month or so I’ve been on the hunt for a really good oatmeal chocolate chip cookie recipe. I mean, all moms should have a go to recipe, don’t ya think? There’s just something so cozy and welcoming about having a jar full of homemade cookies. Anyway, I’ve tried several recipes, some that were on the healthier side, hoping that I could find one that would fit the ticket. Unfortunately, each one I baked came up short. I told Jake my dilemma and he said, “What about finding the recipe that Potbelly uses?” Bingo. If you’ve had one of their cookies before, I’m guessing you didn’t forget it. It’s soft, chewy, and the perfect amount of everything you hope for in a cookie.

So I threw in the towel looking for a healthier version, and found a recipe that comes pretty close to those delectable ones from Potbelly. The main difference is that I don’t make them quite as big as they do. IMG_9567

Potbelly Oatmeal Chocolate Chip Cookies (as found on Pardon the Dog Hair)

Ingredients:

  • 1 cup butter or margarine
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/2 cups oatmeal (old fashioned or quick cooking)
  • 2 cups flour
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups chocolate chips (Ghirardelli dark chocolate chips are my favorite!)

Directions: Preheat oven to 350. In a large mixing bowl, cream butter and sugars. Add in eggs, one at a time, beating after each addition. Mix in vanilla. In a separate bowl, combine oats, flour, baking soda, and salt. Mix together then slowly add into the butter mixture. Mix in chocolate chips. Form dough into tablespoon sized balls, place them on a greased cookie sheet, then slightly flatten. Bake for 10 minutes or until the edges are golden brown.

Now although having a jar full of cookies around IS cozy and welcoming, it isn’t necessarily the best thing for my waistline. I don’t have much self control when it comes to good cookies. Therefore, I made just a few of these cookies at a time and froze the rest of the dough. I formed the cookie dough into balls, flattened them, then placed them on a cookie sheet lined with wax paper. Then I put them in the freezer overnight and divvied them up the next day into ziplock bags and put them back in the freezer. That way, when I was ready for some homemade cookies I just pulled them out, put them on a cookie sheet and baked them at 350 for 15 minutes. IMG_9544

Plus, warm cookies are always the best anyway, wouldn’t you agree?! Especially on these dreary rainy days we’ve been having here in Minnesota lately.

    I do the same thing whenever I make cookies. I always only make what we are going to eat at the moment and freeze the rest of the dough. It is also so much better to have fresh cookies. 🙂

    Yum, those look pretty good! I’ve never had a Potbelly cookie before but I like they way they sound! I love peanut butter chocolate chip cookies but so does my hubby so they go pretty fast in our house! Which isn’t necessarily a bad thing 😉
