Hello hello!

I know it’s not a Tuesday (the day I typically share recipes), but it’s also not looking a thing like Spring around here, so until the weather straightens out a bit, I think I can get away with mixing up my schedule a little too. This is the lovely view of sleet and snow from my back patio today. Have I convinced you to move to MN yet?!

One positive thing about the weather remaining chilly is that getting out my crock pot several times a week in April to prepare dinners doesn’t seem a bit out of season. The only way my family gets a homemade meal these days is if I can prep it within about five minutes and leave it to cook. Hence, I give you this tasty and healthy recipe for Quick Chicken Cacciatore that fits the ticket perfectly.

Quick Chicken Cacciatore (Slightly adapted from The Fitnessista)

Ingredients:

-1 can crushed tomatoes (28 oz.)

-4 – 6 boneless skinless chicken breasts (frozen)

-1 red bell pepper, diced

-2 cloves of garlic, minced

-1/2 sweet onion, chopped

-1 cup fresh basil

-1 teaspoon dried oregano

-splash of balsamic vinegar

-1 1/2 teaspoons salt

-1/2 teaspoon pepper

-a couple dashes of cinnamon

Directions: Put everything in a slow cooker, cook on low for 6 – 7 hours, or high for 4 – 5 hours. Serve atop pasta noodles.

It doesn’t get much easier (or more delicious) than that! Baylen loved it too…perfect for all ages! AND for all seasons, if you ask me. 😉

    Ummm the bread in the background looks amazing! As does your chicken dish but for some reason that bread caught my eye!
