IMG_8622While we were making our transition from Chicago to Minneapolis last Fall, Jake moved up here first and spent some time living with friends while Baylen and I stayed back, waiting for our house to sell in Illinois. Our friends were incredibly gracious to Jake and shared many meals with him. All it took was him trying a few bites of this soup before he called me with rave reviews, telling me I absolutely had to get the recipe from them so it could be a regular go-to meal for us as well.

I had it once at their house a month or so ago, and couldn’t have agreed with Jake more. This stuff is GOOD. I copied the recipe, and made it for the first time last week. I tend to make a lot of chili when it’s cold out, but usually just stick with a tomato base. It was fun to change it up with different spices, and substitute chicken for beef.

Creamy White Chicken Chili

Ingredients: 

-1 lb. boneless skinless chicken breasts, cut into cubes

-1 medium onion, chopped

-1 1/2 teaspoons garlic powder

-1 tablespoon canola oil

-1 can (15.5 oz) great northern beans, rinsed and drained

-1 can (15.5 oz) black beans, rinsed and drained

-1 can (14.5 oz) chicken broth

-2 cans (4 oz each) chopped green chiles

-1 teaspoon salt

-1 teaspoon ground cumin

-1 teaspoon dried oregano

-1/2 teaspoon black pepper

-1/4 teaspoon cayenne pepper

-1 green pepper, chopped

-1 red pepper, chopped

-1 cup fat free sour cream

-3/4 cup heavy whipping cream

Directions: In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chiles and seasonings. Bring to a boil. Reduce heat; simmer, uncovered for 15 minutes. Add the chopped peppers, simmer another 15 minutes.

Remove from heat, stir in the sour cream and heavy whipping cream. Add a little corn starch if you’d like a thicker consistency. Serve with tortilla chips and/or bread for dipping.

If you give this recipe a try, I think chances are high it will soon become a favorite in your home as well! It makes plenty for leftovers, which get better as the days go by.
