Jake’s been off of work since the girls were born, and I am loving every minute with our family of five. Even though we’re walking around in a bit of a sleepy haze these days, our precious time at home has felt like a bit of a staycation. I love that we’ve been able to go at our own pace, stay in our pajamas as long as we’d like, and enjoy time just hanging out and getting to know our newest little bundles.

We’ve been keeping breakfasts pretty simple, usually eating cereal, frozen waffles, or greek yogurt. Today, however, I wanted to change it up a bit, but still keep it super easy so I could put my feet up and enjoy time with my babes. Thankfully my mom has a delicious monkey bread recipe that can be made with Pillsbury biscuits, and is ready to eat in a half hour. While the nutritional value on this is probably zilch, sometimes a sweet breakfast treat is the perfect side to a cozy morning with your family, don’t you think?!

Cheater’s Monkey Bread

Ingredients:

-4 tubes Pillsbury biscuits

-2 tablespoons cinnamon sugar

-1 stick margarine

-1/2 cup white sugar

-1/2 cup brown sugar

-1 cup vanilla ice cream

Directions: Preheat oven to 350. Grease a 9 x 13 pan. Cut biscuits with scissors into quarters and put them in the pan. Sprinkle with cinnamon sugar. In a pan on the stove, bring the margarine, white sugar, brown sugar, and ice cream to a boil. Pour over dough. Bake at 350 for 20 – 30 minutes or until the top is golden brown. Remove from oven and flip over onto a cookie sheet to serve, so the caramel is on top. Enjoy!

Before I head over to the kitchen to make another easy peasy meal, I have an update on the girls! Today marks one week being a family of five, which mean we took Emersyn and Mckinley to their one week check-ups, and left with a great report from their pediatrician. The girls are gaining weight like champs, and we are praising God with every ounce they add. We also snipped off their hospital anklets this morning. Doing that made everything seem strangely more official! Right now Emersyn has a rounder head than Mckinley, so that’s how we tell them apart, but it won’t be long until I get some toenail polish on just to make sure they don’t try to pull any fast ones on me.

    I love monkey bread and how simple it is! It was something that my sisters and I could help my mom make at an early age too because who doesn’t like shaking the biscuits in the sugar mix? 🙂
    I’ve made a simple egg sandwich by microwaving the egg in a small bowl while toasting either toast or an english muffin at the same time. Pop a slice a cheese on the egg for the last 20-30 seconds so it gets melted and you are good to go!
